St Patrick’s Day is celebrated all over the world. The wearing-o-the-green, Celtic music, shamrocks, and, of course, Irish food are all part of the scene, whether or not our heritage is actually Irish. So, what do vegetarians and vegans eat during the festivities? Recipes for corned beef and cabbage, shepherd’s beef pie, and lamb stew abound. Although most of these recipes incorporate vegetables, they also include meat as the main ingredient. So, even if non-meat eaters go “Irish” this time of year, is there some way to enjoy their cuisine without straying from the vegetarian or vegan way of eating?
Mashed Potato-Topped Shepherd’s Pie
Irish fare — without meat –going vegan for St. Patricks Day is not only possible, it’s satisfying. Just to give you some ideas, I have posted two recipes on the blog that we’ve used for St. Patrick’s Day celebrating. One recipe is a side dish, red cabbage slaw salad, and the other recipe is a main dish –mashed potato-topped shepherd’s pie. Both are delicious and both are totally different.
